Pumpkin Chocolate Chip Muffins (5 Ingredients!)

I was desperately craving pumpkin anything anything delicious and mouth watering but…. I was out of sugar and most cookies call for at least 1 1/2 cups sugar :/ bummer. Then I thought I saw on Pinterest that you could mix a can of pumpkin with a spice cake mix. Bingo! Problem solved. FALSE, no spice cake mix here. I did have a yellow box mix so I thought what the heck I’ll improvise. And poof these muffins magically appeared and then disappeared as soon as Mr. Smith came home.  Success this time really was in a ‘can’…. of pumpkin that is!

Pumpkin Chocolate Chip Muffins

Ingredients

1 Yellow Box Cake Mix

1 Can Pumpkin

1 Teaspoon Pumpkin Pie Spice

1 Egg

1/4 Cup Semi-Sweet Mini Chocolate Chips

Directions

Mix together first 4 ingredients then stir in chocolate chips.  Spoon 3/4 full in mini muffin pans and bake at 350 degrees for 15 minutes.

Serve warm or cool; with or without cream cheese frosting.

*Makes 48 mini muffins at approximately 47 calories per muffin // without frosting.

Smith3 IMG_6396 IMG_6398I have a lot of thoughts on Valentine’s Day. Some people say that we shouldn’t just celebrate love just one day of the year and I completely agree! However, marriage and love isn’t showering each other with gifts everyday of the year to show your feelings. I love when I have a long day and I come home to a clean house. I appreciate when Cam takes the dogs out running so they get out some energy and we can have a quiet night at home. Love is letting me watch Friends on Netflix when a new episode of Arrow is on. Love is when Cam tells me we have to leave at 4:30pm because he knows I will be running late and we don’t have to leave till 5:00pm :)

There are numerous ways to show your love for someone. My new favorite (hopeful tradition) is Galentine’s to celebrate the strong and loving women in my life. This Saturday at PB we held a #loveyourbody campaign with Health Magazine and I got to see some of my favorite women work hard for their goals and celebrate their journey.

Cam took me to a church dance this weekend and then when I came home from working Pure Barre he set up a picnic in our living room(gush!) He had some sweet gifts set up for me as well. We had the best day relaxing and then grabbed dinner and froyo with his parents. I love my hubby and family so much and hope that you had a wonderful weekend with your special someone or best gals!

THIS year we are spending Christmas with my family in South Carolina. That’s right, a DUCK DYNASTY marathon, good family, great cookin, deer sausage for breakfast, and some dove hunting in a pear tree.

Now that’s all true, but we are put on our fancy pants for a wedding weekend including a girls night out, a day at the spa with my gorgeous mom, and more than one fabulous dinner! Can’t wait to show y’all a little of home sweet home! Merry Christmas. xoxo

At church each year we have an event for girls ages 12-18 called Young Women’s In Excellence.  It recognizes all that the girls have accomplished that year with their personal and spiritual goals.  This year we had a Red Carpet Theme and everyone got to dress up in formal attire.  We served dinner and dessert, had MC’s, award presentations, and a slideshow.  It was great way to see their accomplishments and we wanted to throw them the celebration they deserved.

Step 1: Invitations. I was also in charge of invitations for the event and with an overwhelming schedule I knew just who to turn to for help.

HAPPY HALLOWEEN Y’ALL!

We love Halloween round here! Fall is in the air, pumpkin spice smell… well pumpkin everything really, candy, dressing up, cooler weather, hiking. AHH I am so freakin excited!  We went as Russell & Mr. Fredricksen from ‘UP’ for our ward Trunk or Treat.  Then Saturday we headed to party with our dental school friends as Forrest Gump & Lieutenant Dan.  Here are some of my favorites from this October!

>>Freedom Cupcakes

Happy 4th of July everyone! Today, I woke up in the mood for cupcakes and since we had a wonderful holiday to celebrate our freedom and country, I thought there is nothing better than some festive Freedom Cupcakes.
I also tried my hand at cupcakes in a jar and it turned out great! So easy to make and a great gift for anyone!
We had some friends over for brunch to celebrate with blueberry pancakes and had such a great day with them! I hope everyone had a great holiday and took some time to enjoy our country and the freedom that we have!

Cupcakes in a Jar:

Take your favorite white cake box or made from scratch mix and evenly separate it out into three bowls.
Dye one bowl red, one blue, leave one white.
Bake your cupcakes and after they are cooled,  cut in half.
Layer the cake in the jar in the order you wish adding frosting in between layers.
Top with frosting and sprinkles!
