Frittata

(serves 4)
Ingredients:
4 Eggs
1 Cup Cooked Angel Hair Pasta
1 Zucchini
Salt & Pepper to Taste
Shredded Cheddar Cheese
Directions:
Chop & fry up zucchini with olive oil in medium fry pan. Season with salt & pepper.
Add in you pasta to cook some with the zucchini for 2-3 minutes.
Poor egg mixture over pasta and veggies and cook until fried.
Flip over to cook both sides evenly.
Cut in pie like sections and top with cheese.
Let’s just say when Husband threw this idea out for a vegetarian dinner suggestion, I was not on board. He said that this little old man taught him how to make it late one night in Italy and that it tasted so good! I said probably because you were just so hungry you would like anything. Pasta and eggs sounded really gross to me for some reason.  Boy was I wrong.  This was so delicious and packed with protein!
