Pesto Shrimp Pasta


1 Box Penne Pasta

1 lb. large peeled shrimp
5 minced garlic cloves
2 tsp. butter
4oz. ‘Classico’ Traditional Basil Pesto (& you can buy it with Pine Nuts in it)
1/2 cup ‘Bella Sun Luci’ Sun Dried Tomatoes with Italian Herbs
Pepper to Taste
Artichoke Hearts (optional)
Parmesan Cheese and Pine Nuts for topping (optional AND recommended)
Step 1:  Begin cooking your pasta to al dente.
Step 2:  Saute garlic in the butter and add shrimp until cooked through.
Step 3:  Add pepper to taste and then mix in pesto sauce and tomatoes to shrimp.
Step 4:  If you wish to add artichoke hearts, cook through and dice in half and add to shrimp.
Step 5:  Mix pasta into shrimp and top with Pine Nuts and Parmesan cheese.  Serve with warm buttered garlic bread.

*A delicious twist to an Italian dinner! Remember you can always change the portion size to fit just your appetite or to feed an entire dinner group!
